This meal is so quick and easy. It takes 5 minutes to prepare and 5 minutes to cook. If you’re anything like me it will also take 5 minutes to eat.
All you need is
- A bag of Gnocchi. I buy the Waitrose essentials gnocchi, it’s very good and a bag serves four people.
- A punnet of cherry tomatoes, more if you like things VERY tomato-y.
- A red onion (but if you’ve only got a brown one why not use that instead?)
- 2 garlic cloves.
- A good handful of basil.
- A few spinach leaves. (I have a fussy eater so I throw the spinach in and call it basil- they’ll never know)
- A glug of olive oil.
Cook the gnocchi as directed (pan of boiling water, 3 minutes, job done)
While that’s happening heat the olive oil in a pan, cook the onions for a minute or two on a low heat, when they are beginning to soften (you don’t want them brown) throw in the garlic, tomato, basil and spinach.
Drain the gnocchi, then toss that into that pan as well.
Give it all a really good stir to make sure the gnocchi gets all flavour -y.
